RAM Q's and mobo/cpu

Hey all!!
I just found this site yesterday and joined tonight.
It looks pretty good and i like the reviews as i found a few on parts i have already bought for my new build this week.
I'm hoping to get some Q's answered on my new build.
1. Will there be a big difference going from DDR 3 1600 to DDR3 1866 ram ?
2. I have read that there is really no difference between,

It states that is supports
Does that mean that i can run 1866 ram without overclocking it to obtain the 1866 ?
As i have read AMD Phenom II X6 1100T Black Edition Thuban CPU's, stock, only support up to 1600 ram.
I will be running 2 EVGA SuperClocked 01G-P3-1463-KR GeForce GTX 560 (Fermi) 1GB in SLI.

If there won't be a major noticeable difference between the 1600 & 1866 ram i may just opt for the cheaper 1600 so i don't have to mess around with overclocking it.
