If your video and photo apps can benefit from lots of memory then I would say go with 6GB-8GB. 16GB is probably way, way more than you need.

Pretty sweet setup. I would agree about the case thought. Seems like an odd choice for an HTPC. Still, very cool setup.

I've found this with Intel CPU's as well, I just turn off the power saving stuff in the bios.

Personally I would not spend that much on any video card but the performance is impressive for a single GPU. I would agree on the video card ideas but it also depends on what games you want to play. If you go for a higher end video card make sure whatever PSU you decide to buy will support it.
