When will it be out? Chances are if its a new series it'll probably be fairly expensive though, and Ill most likely build it within 2 months or so. And yeah about the memory I was originally going to go with 8 but would 12 have any significant advantages?

Even if you don't build with a ivy bridge, should be out in April-June. The i7 2600k price should drop when Ivy bridge is near release. The more memory the better, 8 should be fine.

Save yourself some money and get an i5 2500K. The only things the 2600K has over the 2500K is Hyperthreading and more cache. Two things you'll probably never notice the difference with.

Yeah as far as cache goes I think I'll be fine with the i5, and RAM capacity isn't a priority for me, more towards raw power for a fairly inexpensive price, so 8 should be fine. Hopefully both the i5 and i7 will drop in price, depending on which drops more I'll probably make my decision, because with my laptop sold ill have about 100-200$ to play with. Any comments on the video card? I was thinking a 580 but my buddy has a stock 570 and its fine for gaming, but I'm hoping for a bit more performance. Also will cooling be a real issue for this unit? Hoping for around 5 fans, but under the stress I put during hours of gaming I might need to buy more, and I just want to save some money/my equipment as well.
