A Nvida 570 or nvida 560Ti? I just ordered the Evga 570 so I hope I made the right choice. What do you think the difference in PPD would be. Thanks in advance.

for folding... the 570 without a doubt...
The 560 Ti has 384 CUDA cores at 1644MHz
The GTX 570 has 480 CUDA cores at 1464MHz
Overclock the extra 96 CUDA cores on the GTX570 and you'll have a folding monster. I can overclock my GTX 570 up to 1650MHz on the shaders, so you can match the shader speed of the 560 Ti, but have 96 extra cores working the F@H WU.
As you said two 560 Ti's would get you 768 CUDA cores cranking away, so yeah, that would be faster than a single GTX 570
