what version
I am looking for a windows 7 OS that will install on two machines, a dual boot MAC setup and a fresh install on a PC ( 64 bit). I see a OEM version and an OEM 3 pak but no OEM 2 paks. Will a regular OEM work for me and what happens when I upgrade my PC again??

If you go OEM route you will need to get 2 singles, or buy the 3 pack and have a spare.
I use OEM disks for all the builds I do. OEM disks DO NOT upgrade versions, its clean installs only.
if/when you jump OS version again you get another OEM disk and redo the machine.
