would it be better to buy two vapor-x 57xx and crossfire them, or buy a single 5850?

the 5750s have reasonable performance, and it would be cheaper and more cost-effective to buy two "worse" cards and let them work together, right?
oh, and i'm not going to upgrade anytime soon, just trying to plan out a upgrade path for later on.

i believe 2 5750's perform close to a 5870 in most cases, so it'd probably be the better buy if you have a crossfire motherboard

I don't trust multi-GPU setups because of variable compatibility. If the two cards perform similarly to the one, then I'd say you're better off using the one card since then you'll have better consistency in performance. Then you could add in another of that one card later on. Typically multi-GPU setups create more heat and take up more power. They're not quite as efficient.

Always buy the best single card you can afford now... down the road you have a better upgrade path as you can add a second... If you spend all your budget on two cards you limit your update options down the road. One card is also more power efficient and less hassle to use.
