Which type of memory????

Hello folks, I hope this finds you well!
I have, I think, just a few more questions, if you’ll suffer them, regarding my future PC build.
It will be built within an Ultra MicroFly MTX case, 450w PSU, Gigabyte GA-MA78GM-2SH AMD 780G chipset MoBo,

I intend to employ Windows XP Pro as the OS. This system will be used for a few flight sims such as Ubisoft’s IL-2 series, MS Combat Flight Sim and MS Flight Sim, high def/BluRay DVD playback, music storage, and occasional internet surfing and email.
This motherboard has 4 banks for memory and is said to support DDR2 1066. I at this time, do not understand enough about the various qualities of memory in order to determine which type of memory to use.
When faced with “Dual Channel”, and that only “certain” processors support it, and a *note* on GigaByte’s website:
“Note: Due to AMD AM2+ CPU limitation, DDR2 1066 is only supported by 1 dimm per channel.”
It then says downgrade to “…DDR2 800…”
I am getting more and more confused as I go!!!
1st question: What type of memory would best suit my intended use?
2nd question: Will the on board Realtek ALC889A audio meet my needs for HD movies with Dolby Digital and DTS surround sound, or should I add a PCI sound card?
The MoBo has built in audio as follows:
1. Realtek ALC889A codec
2. High Definition Audio
3. 2/4/5.1/7.1-channel
4. Support for DTS (dts NEO:PC)
5. Support for S/PDIF In/Out
6. Support for CD In
